The rules have changed!  It used to be "red with meat and white with fish" was enough to know about pairing wine with food, but today's global menu proves much more challenging. In this interactive five week class we will decipher what works, what doesn't work, and most importantly: why the chemistry of wine and food is important. We start with the basics of understanding how the primary tastes in foods (salt, sweet, sour, bitter and savory) change the way you experience wine with food. Then, we follow-up the basics with separate sessions actually pairing wines with first courses, fish dishes, other proteins and typically "troublesome" dishes. This class will help you to understand the basic principles of wine and food pairings to make your dining experiences more pleasurable. Please bring four wine glasses to each class.

This course has been designed to give students a deeper look into wine appreciation, and will introduce students to the comparative analysis of wines made from the same grapes, but from different countries and regions. Students will have the opportunity to taste and compare the classic red and white grape varieties from a number of old and new world wine regions, gaining an understanding of the importance of climate, soil, varietal selection and cultural practices on the wine making process. In addition, a closer look at fortified and sparkling wines will be included. Please bring six wine glasses to each class.

Most wine experts agree the safest way to match wines with food is to follow the perennial rule white wine with fish, red wine with meat. By following certain guiding principles such as this one, you can learn to choose wines that will complement and balance the flavors of any dish. In this interactive five week class we will decipher what works, what doesn't work, and most importantly, why the chemistry of wine and food is important. You will learn theories and practical hints for matching food and wine, and sample a full spectrum of wines ranging from Sauvignon Blanc, Gewurztraminer, Cotes-du-Rhone, Cabernet Sauvignon, and Pinot Noir. Our wine courses will be paired with entrees like Mussels Steamed in Butter and Wine and Garlic Roasted Chicken. For dessert, you will enjoy sweets such as Valhrona Italian chocolate with a rich Port. Make your dining experiences more pleasurable, and discover the glory of perfect matchmaking. A $65 food and wine fee is included in the course fee. Please bring four wine glasses to each class.

Limited to: 25 attendees
Adventurous chocoholics and lovers of fine wine are invited to join us as we experiment with various wine and chocolate pairings. In preparation for Valentine's Day, we'll examine different combinations of chocolate and wine to better understand how they can be paired for maximum enjoyment. We will taste a variety of milk and dark chocolate artisanal Candies, Chocolate-covered Strawberries, and Chocolate-Dipped Biscotti, and pair our delicacies with appropriate wines including Port, Sauternes, and Champagne. We'll compare a wine in both its dry-fermented and dessert forms, and see how each pairs with chocolate. Join us for this indulgent experience, and learn how to match the flavors, sweetness, acidity, and texture of wines with chocolate. Prerequisite for this class: a love of chocolate and wine. Please bring three wine glasses to class. A $25 chocolate and wine fee is included in the course fee.
